Baked





This is one of my family's favorite ways to eat veggies now!  I hope you will try this with whatever fresh produce you have in your area.

(Experiment here...you could try just about any veggie.)

1 purple onion
2 yellow squash
2 zucchini
2 cloves garlic
1 red pepper
1 sweet potato
1 green pepper

1/3 cup olive oil
1 tsp. sea salt

Chop all these ingredients and combine in a large bowl.  Add salt and oil.  Coat all veggies and pour on a baking sheet.  Bake at 350 for 15-20 minutes.  If possible, use tongs to turn vegetables half way through.  Serve as a wonderful side dish!
