Save It

Have you ever cooked a whole chicken and hated to throw out the trimmings when the white meat was gone?  Yes.  I don't plan on having my family gnaw on the bones, but there is something about tossing the leftover and the juice...

Don't toss it next time.  Put it in a freezer bag and save it all.  Freeze it if you don't have time or refrigerate for a couple days.  Making homemade chicken broth is so SO easy and really saves you big at the grocery store.  Especially if you do organic broth when shopping.  From the remains of one whole chicken, I got 4 quart jars of broth.  Here's how to do it:



-cooked chicken leftovers and juices
-find the largest pot for the stove you have
-wash all veggies you want to include
-carrots, celery, onion, parsley- don't bother chopping
-tablespoon sea salt and tablespoon white pepper
-cover with plenty of water
-boil everything together covered with lid for at least 30 minutes
-if you would rather slowly simmer for a couple hours, I have done that also...the tastes are even better:)
-when complete, let cool on the stove for 15 minutes
-strain out the pieces and veggies
-you will be left with a wholesome broth...create other flavors if you choose to experiment!

I like to put the broth into a glass container like a mason jar.  Keep it refrigerated until use.  Only thing, I would not keep this for an extended period.  Maybe a couple weeks.  I suppose you could freeze it.  We must remember the chicken had a date on it when we purchased it.  And, these were not "properly" canned jars, just storage containers.
